Sweet Corn Funnel Cake

Serves 2

  • 1/4 c and 1 tbsp Corn Meal
  • 1/4 c All purpose flour
  • 1/8 tsp Cayenne Pepper
  • 1/8 tsp Mustard Powder
  • 2 tbs Granulated Sugar
  • 1/3 c Water
  • 1/2 of an egg
  • Pinch of Salt
  • 2 tsp Sunflower oil
  • Sunflower oil for frying, about two cups
  • 1/8 tsp baking Powder
  • Honey
  • Confectioners Sugar


  1. Heat your sunflower oil in a small pot to approximately 375 degrees f. The oil is ready when you drop a small dollop of batter into it and it floats to the top.
  2. Combine your dry ingredients in a small size bowl. Combine your wet ingredients in a medium size bowl. Add your dry ingredients to your wet and mix with a whisk. Let the batter stand for thirty minutes while your oil heats
  3. When the oil is heated slowly drizzle the batter into the hot oil. Cook on each side for about 2-3 minutes, or until golden brown
  4. Once both sides are cooked, remove from the oil and place on a towel to absorb some of the oil. Drizzle with honey and dust with confectioner’s sugar
  5. Enjoy 🙂
